How to Make Sheet Pan Salmon

with Roasted Vegetables and Pasta

What You’ll Need:
  • 1 (8 oz) package Cedar Bay Cedar Planked Atlantic Salmon (Hickory Maple)

  • 2 tablespoons olive or avocado oil

  • ½ teaspoon kosher salt

  • 2 cups broccoli florets

  • 2 cups cauliflower florets

  • 3 cups cooked pasta (such as penne, rotini, or spaghetti), drained

  • 2 tablespoons salted butter

  • ⅓ cup grated Parmesan cheese

  • 2 tablespoons fresh basil, chiffonade (thinly sliced)

  • 1 lemon, cut into wedges

Equipment: Large sheet pan or cast iron skillet, Grill or stove-top.


Preparation Instructions:
  1. Prepare the Salmon: Thaw the Cedar Bay Cedar Planked Atlantic Salmon overnight in the refrigerator or for about 40 minutes in a cold water bath. Remove from packaging and set aside.

  2. Prepare the Vegetables: Preheat your grill to medium-high heat (around 400°F) for indirect cooking. If using an oven, preheat to 400°F (200°C). While the grill/oven preheats, lightly toss the broccoli and cauliflower florets with the olive oil and salt in a large bowl.

  3. Roast the Vegetables: Arrange the vegetables in a single layer on the sheet pan or in the cast iron skillet. If using a grill, place the pan over indirect heat. If using an oven, place the pan in the preheated oven. Roast for 10 minutes, stirring halfway through.

  4. Add the Salmon and Pasta: Place the Cedar Bay salmon plank directly on the sheet pan or in the skillet alongside the vegetables. Continue to cook for another 10-15 minutes, or until the salmon is cooked through and flakes easily with a fork and reaches an internal temperature of 140°F (60°C). During the last 5 minutes of cooking, add the cooked pasta and butter to the pan of vegetables, tossing gently to combine with the vegetables.

  5. Finish and Serve: Remove the sheet pan from the grill/oven. Flake the salmon into bite-sized pieces directly onto the pan with the vegetables and pasta. Sprinkle with Parmesan cheese and fresh basil. Squeeze fresh lemon juice over the entire dish. Serve immediately from the sheet pan to keep warm and for a rustic presentation.
