Salsa Pork Meatballs with Fresh Salsa Queso Dip

A fun and easy game day or holiday appetizer featuring Sam’s Fresh Salsa; Salsa Pork Meatballs with Fresh Salsa Queso Dip! This recipe has little preparation because Sam’s does all the chopping, from tomatoes, onions, jalapeños to Green Peppers, Red garlic, and cilantro. Sam’s Fresh Salsa is added to add flavor to the pork meatballs and to make a silky smooth Fresh Salsa Queso Dip!

RECIPE:


Salsa Pork Meatball with Fresh Salsa Queso Dip

Ingredients

For Meatballs:

1 pound ground pork, 80% 20% mix

1/4 cup crushed tortilla to mix in meat mixture

1/4 Sam’s Mild Salsa

1 whole egg, beaten

1 teaspoon coriander

1/2 teaspoon cumin

1/4 teaspoon granulated garlic

1/2 teaspoon sea salt

3/4 cup crushed tortillas to roll uncooked meatball in

For Salsa Queso Dip:

1 tablespoon cornstarch

4 ounces of grated sharp cheese

4 ounces of grated Colby jack cheese or Monterey Jack

1 tablespoon unsalted butter

1 cup Sam’s Fresh Medium Salsa, additional 1/4 cup as garnish

1/2 teaspoon granulated garlic

1/4 teaspoon ground cumin

1/4 teaspoon onion powder

1/4 teaspoon salt

1 1/4 cup half and half

1/2 cup chopped cilantro, divided

Instructions:

To Make Meatballs:

Preheat the oven to 375°F. Line a large rimmed baking sheet with parchment paper or foil.

Place all meatball ingredients in a large bowl and mix with a large spoon until all ingredients are combined.

Form 18 balls by using a round tablespoon or a #40 (1 1/2-tablespoon) cookie scoop. Roll meatballs into crushed tortillas. Place meatballs on a prepared pan at least 1-inch apart. Note: 2 cups of tortilla chips will crush into 1 cup crumbs.

Bake meatballs for 12-14 minutes, turning the balls over after 7 minutes of baking.

To Make Fresh Salsa Queso Dip:

Meanwhile, make the salsa queso dip. Toss together the cornstarch and grated cheese. Note: This can be done on the work surface that the cheese was grated on.

Melt the butter over medium heat in a large saucepan.

Add 1 cup of Sam's Fresh Medium Salsa, and stir for 30 seconds. Add the garlic, cumin, onion powder, and salt; cook for 2 minutes.

Add half and half to the salsa mixture; cook for 1 minute just to warm cream. Gradually stir the grated cheese into the milk until it becomes a silky sauce, adjust heat to low or medium low as needed. Lastly, stir in the cilantro.

To serve: Serve the Salsa Pork Meatballs with a bowl of Fresh Salsa Queso Dip. Garnish the queso dip with 1/4 cup Sam’s Fresh Medium Salsa, and chopped cilantro. Serve meatballs with skewers.

Alternate serving idea: Arrange the salsa pork meatballs in a large shallow casserole dish. Pour the cheese sauce over the meatballs, and garnish with additional fresh salsa and cilantro; serve with appetizer forks.
