Who doesn’t love a Mac and Cheese dinner? Although it's time to elevate you Mac and Cheese experience by adding fresh salsa, make that Sam’s Fresh Salsa! Sam's Fresh Salsa does all of the chopping while you get ready to eat a creamy bowl of Salsa Mac and Cheese! This is my entree entry in #SamsSalsaRecipeChallenge!
Fresh Salsa Mac and Cheese
A comforting warm bowl of cheesy Mac and Cheese is always welcomed as a quick and easy dinner entree. But I decided the classic dish needed a flavor-do-over! So I grabbed a tub of Sam’s Fresh Salsa and a bag of tortilla chips! So proud to introduce to you, the most delicious Fresh Salsa Mac and Cheese with a crispy tortilla topping that catches the eye due to fresh bright garnish, Sam’s Fresh Salsa!
The recipe has little preparation because Sam’s does the majority of the prep by chopping tomatoes, onions, jalapeños, green peppers, garlic, and cilantro! Sam’s Fresh Salsa really boosts the flavor!

Sam’s Fresh Salsa Mac and Cheese
Ingredients
1 pound elbow pasta or preferred pasta, 1 tablespoon salt for pasta water
4 ounces grated Sharp Cheese
4 ounces grated Colby Jack Cheese
4 ounces grated Muenster or Monterey Jack Cheese
1 tablespoon cornstarch
1 tablespoon unsalted butter
1 cup Sam’s Fresh Mild or Medium Salsa, additional 1/3 cup as garnish
1/2 teaspoon granulated garlic
1/4 teaspoon ground cumin
1/4 teaspoon onion powder
1/4 teaspoon salt
1 1/4 cup half and half
2 cups tortilla chips
1/2 cup chopped cilantro
Instructions:
Preheat the oven to 400°F. Lightly butter a 3-quart baking dish.
Cook the pasta as directed in package directions, adding 1 tablespoon of salt to the boiling water before adding pasta. Drain pasta; set aside.
Toss together the grated cheese and cornstarch together. Note: This can be done on the work surface that the cheese was grated on.
Melt the butter over medium heat in a large saucepan.
Add 1 cup of Sam's Fresh Medium Salsa, and stir for 30 seconds. Add the garlic, cumin, onion powder, and salt; cook for 2 minutes.
Add half and half to the salsa mixture; cook for 1 minute to warm the cream. Gradually stir the grated cheese into the milk until it becomes a silky sauce, adjust heat to low or medium low as needed.
Add cooked pasta to the cheese sauce and gently fold until well mixed, adding extra milk for desired creaminess, if needed. Pour cheesy pasta into a prepared baking dish. Crunch the tortilla chips on top of the macaroni and cheese. Place in the center of the oven, and bake for 10 -15 minutes, until warmed through.
To serve: Garnish Fresh Salsa Mac and Cheese with 1/4 cup or more Sam’s Fresh Salsa and cilantro. Serve with a fresh green salad or steamed broccoli.
