scallions, sweet peppers, and spinach. Take that stir fry filling and roll it up into a bundle. Roll the bundle in egg and Parmesan Panko crumbs, and fry it to golden crisp deliciousness. Hot and Spicy Stir Fry Yakisoba Noodle Stuffed Rollatinis
Ingredients
1 (7.7 oz) package Fortune Yakisoba Stir Fry Noodles
1/4 cup water
1 1/2 cup sliced mushrooms, 6 ounces
3 tablespoon canola oil, divided
1 bunch scallions, chopped to make 1/2 cup
1/2 cup chopped mini tri-color sweet peppers
8 cups fresh shredded spinach
2 tablespoons Hoisin sauce
2 tablespoons minced fresh basil
1/4 bunch cilantro, divided
2 limes, as instructed
4 chicken cutlets, pounded thin or thin uncooked veal for Scallopini
1 egg, beaten
1 cup Panko breadcrumbs
3 tablespoons grated Parmesan Cheese, divided
2 tablespoons minced fresh basil
1/4 bunch cilantro, divided
1 lemon, zest only
Salt and pepper
Instructions
Preheat the oven to 375 degrees F.
Remove seasoning packet from Fortune Yakisoba Stir Fry Noodles package. Sprinkle the seasoning packet, from a package of Fortune Hot and Spicy Yakisoba Stir Fry Noodles, into a bowl with 1/4 cup water, whisk to mix, and set aside.
Pierce the noodle packet a few times. Microwave on high for 1 minute, and set aside.
In a dry skillet, over medium heat, stirring occasionally, sweat sliced mushrooms for 3 minutes.
Scoot the softened mushrooms to one side of the skillet, increase the heat to medium high, and add 1 tablespoon canola oil to the other side. Add scallions, mini peppers, and spinach to the hot oil, at 45 second intervals, stirring between each addition. Add the Yakisoba seasoned water and Hoisin sauce, and cook for 2 minutes, or until the spinach has wilted. Fold in the Fortune Stir Fry Noodles.
Remove the skillet from the heat. Stir in chopped basil, 2 tablespoons chopped cilantro, and 1 tablespoon of lime juice. Salt and pepper to taste, if needed.
Place the thin chicken or veal cutlets onto a work surface. Note: Thinly sliced chicken and veal is available at the store, if not, place cutlets between 2 sheets of plastic and pound thin.
Divide the Yakisoba Noodle Stir Fry Noodles vertically down the center of each cutlet, leaving an ⅛-inch rim. Roll the meat over the noodle filling starting at the thinnest end to make about a 3-inch wide bundle. Reserve extra filling in a microwave safe bowl.
In a shallow bowl, mix the Panko crumbs and Parmesan cheese. In a second bowl, whisk the egg and add 1/2 tablespoon water. Dip each noodle filled bundle into the egg mixture then sprinkle and roll in the Parmesan Panko crumbs.
Wipe out the skillet, and heat 2 tablespoons canola oil over medium-high heat. Fry both sides of the Yakisoba Noodle bundle until crisp and golden brown on both sides. If the center of the chicken roll has not reached 165 degrees F, place on a baking sheet and finish cooking in the oven, about 10 minutes. Note: I cooked mine completely on the stove top. It will depend on how hot your medium-high heat and the skillet you are cooking in.
To serve: Reheat the reserved Yakisoba noodles and vegetables in the microwave for 1-2 minutes. Transfer to a serving platter and top with the crispy Yakisoba Noodle Stuffed Rollatinis. Sprinkle with remaining Parmesan cheese, cilantro and basil leaves. Serve warm.
NOTE: You can prepare this recipe in advance and skip the frying simply by baking the Yakisoba Noodle Chicken Rollatinis at 375 degrees F. for about 30 minutes. When the chicken reaches 165 degrees F in the center of each roll it is done.
