Easy Shrimp Wonton Appetizer
Citrus Marmalade Shrimp on Guacamole Wonton Crisps with Sriracha Sour Cream
Game Day, any day, Cinco de Maya or any holiday; a tantalizing shrimp and guacamole topped wonton crisp is always going to score high points with family and friends! For the topping, let’s start with a scrumptious easy glaze for shrimp with orange marmalade spiked with hot sauce, and balanced with maple syrup and lime juice! Scrumptious! Hints of smoked paprika and ancho powder help boost the flavor in the glaze and contrast deliciously with the simple guacamole. Don’t forget to stir lime juice and sriracha into the sour cream; this sauce really brings one more delicious layer to the dish. Every element of the appetizer is super quick!
I was invited to be part of TWIN DRAGON ASIAN WRAPPER RECIPE CONTEST. I was sent packages of Twin Dragon wonton and egg roll wrappers to create appetizers in two categories, holiday and game day. I am having so much fun creating tasty appetizers, I depleted my stock, and headed to the store to buy more Twin Dragon egg roll and wonton wrappers! My local Walmart and Von’s, in the Los Angeles area, carry Twin Dragon wrappers. In other parts of the country look for Twin Dragon Asian Wrappers at Shaw’s, Stater Bros., Fred Meyer, QFC, Safeway, Giant Stores, Shop N Shop, Winco, Albertsons, and Price Chopper. WOW! Easy to find.

TWIN DRAGON WONTON WRAPPERS
The wonton wrappers are vegan, non-gmo, and have no preservatives. They need to be refrigerated, but can also be frozen and thawed in the refrigerator. I found the wrappers easy to use and they did not stick together. In the past, with different wonton and egg roll brands I have been frustrated when trying to separate the sheets. Not with Twin Dragon wrappers! YaY! I must say, every wonton wrapper peeled off the super easy! Whew!
WHAT BRAND WONTON WRAPPERS FRY THE BEST
I love to experiment in the kitchen and conduct test tastes! So I bought another popular brand to see the comparison when frying wontons. Guess which brand won? Yep, Twin Dragon won the best qualities in frying up with a consistent golden brown. Twin Dragon wonton wrappers puffed up with little crispy bubbles more so than the other brand. Twin Dragon’s friend wonton wrappers tasted better and seemed to hold up and stay crispy when I let the two brands of wonton crisps sit several hours.

WHAT YOU NEED TO KNOW ABOUT THIS RECIPE:
There are about 26 wonton wrappers in half a package of Twin Dragon Wontons. Decide on how many you want to serve, and feel free to use more or less wonton wrappers dependent on how many guests you are serving and how many shrimp you bought.
How many will your guests eat? This appetizer is extremely yummy and light. I actually ate 3 in one sitting…or was that four? I would plan on 3 per person if you are not having a lot of other appetizers.
I user a generic brand of sriracha in this recipe. I have also used Tapatio hot sauce when I did not have sriracha in the pantry.
My shrimp were a bit small so 2 shrimp fit on the fried wonton wrapper. If you are preparing extra large or jumbo shrimp you might be able to serve one shrimp per fried wonton.
I used a package of cooked shrimp in this recipe for ease. Usually, I like to sauté my own shrimp, but one of the judging criteria was ease of recipe! If you enjoy cooking raw shrimp please do! Simply sauté shrimp for 2 minutes over medium high. Add the sauce and cook until sauce starts to thicken then add the shrimp and cook until shrimp are cooked through. Grilled shrimp would be delicious in the citrus marmalade glaze.
In order for the wonton crisps to form an indentation (bowl) to hold the guacamole and shrimp, I use a vegetable masher or an ice cream scooper. All you really need is a utensil that can withstand the hot oil, and is about 2-inches wide.

Citrus Marmalade Shrimp on Guacamole Wonton Crisps with Sriracha Sour Cream
with Sriracha Sour Cream
Yield: 12 wonton crisps Cook Time: 15 minutes Total Time: 25 minutes
Ingredients:
Wonton Crisps:
12 or more individual Twin Dragon Wonton Wrappers (2 shrimp per wonton)
2 cups or more canola oil or favorite frying oil
1 pound jumbo shrimp, 21-25 count, cooked, peeled, tail-less, deveined
Guacamole:
3 avocados, cut in halves, pits removed
1 tablespoon lime juice
1/2 teaspoon sea salt
1/4 cup cilantro, chopped
Citrus Marmalade Glazed Shrimp:
5 tablespoons maple syrup
2 tablespoons sweet orange marmalade
3 tablespoons lime juice
1 tablespoon canola oil
2 teaspoons sriracha or hot sauce
Sriracha Sour Cream:
1/2 cup sour cream
1 tablespoon sriracha or hot sauce
1 tablespoon fresh lime juice
1/4 teaspoon salt (Himalayan Pink Salt is my favorite for this dish)
Instructions:
To make wonton crisps:
Pour canola oil into a Dutch oven or high-walled skillet, about 1-inch in depth. Heat oil, over medium-high heat, to 350°- 365°F. Fry wontons, one at a time, by carefully placing in hot oil. Immediately press the center of the won with a metal ice cream scooper, vegetable smasher, or ladle. Fry each wonton about 10 to 15 seconds on each side or until golden brown and crisp. Drain on a wire rack over paper towels. Set aside.
To make guacamole:
Scoop avocado flesh into a medium bowl. Mash the avocado, lime juice, and salt with a fork. Add cilantro and taste; add extra salt or lime juice, to taste. Set aside.
To make Citrus Marmalade Glaze Shrimp:
In a small bowl, mix maple syrup, orange marmalade, lime juice, canola oil, and sriracha.
In a large skillet, over medium-heat, heat glaze until slightly thickened, about 5 minutes. Add shrimp, and immediately turn heat to medium-low, and toss until heated through, about 2 minutes. Transfer shrimp to a serving bowl.
To make Sriracha Sour Cream:
In a small bowl, mix sour cream, sriracha, and salt.
To serve: On a serving plate, layer one wonton crisp per person, with guacamole, shrimp, sour cream, and sprinkle with cilantro. Arrange the remaining wonton crisps, guacamole, sriracha sour cream, and chopped cilantro, on a serving plate so friends and family can build their own wonton crisps after they try the one you plated for them! Wonton crisps stay crispy this way and guests enjoy making their own.
