Recipe: Overnight Cranberry Basil Yogurt Granola Parfait
I just finished a bowl of Overnight Cranberry Basil Yogurt Granola Parfait. The flavors all meld together in such a refreshing and delicious way! I actually made the overnight bowls 2 nights ago and the basil accented cranberries with orange, vanilla yogurt, and granola was so fresh still. Note to self; make a few more next time!
I need to be able to grab a quick breakfast before tackling the never ending list for the day. When The Cape Cod Select Premium Cranberry Blogger Challenge came up I said YES! So glad I did because it motivated me to brain storm all sorts of whole cranberry recipes! I found out that the Cape Cod Select Cranberries are indeed premium little balls of tart nutrition and flavor!
The contest challenge was sent to 50 bloggers and one category was Healthy On-The-Go. I love starting the day with a nutritious breakfast numerous times a week. The solution for me is a well balanced fruit, yogurt, and granola bowl. I bounced off the idea of the overnight oatmeal bowls you see on Instagram BUT I didn’t want mushy oats…and I wanted them toasted. YaY ~ granola is the answer. Granola performed exactly how I wanted it to, soft but not mushy and much more flavorful than oats. I used an Ancient Grain Granola. Vanilla Almond Granola was my second choice. Just pick your favorite store bought or homemade granola!
WHY CRANBERRY AND BASIL: I have explored all sorts of breakfast options this year. One of my discoveries has been herbs with fruit on yogurt and granola. All I can say is, try it! Cranberry + Basil + Orange = deliciousness.
WHY I LIKE COOKING CONTESTS: I love to push myself in cooking contests and have done so for 10 years. It is rewarding to meet companies I have not worked with before and read of their passionate and dedicated vision and work. I love trying out new products and brainstorming creative ways to use that product. You can imagine how much fun I had on my frozen cranberry exploration. I did learn, I love Cape Cod Select Premium Cranberries straight out of the package. I look forward to serving tasty cranberry accented salads this summer.

Overnight Cranberry Basil Yogurt Granola Parfait
Serves: 2
Ingredients:
1 cup Cape Cod Select Premium Frozen Cranberries
2 tablespoons agave syrup or honey 1/4 cup chopped basil
1 cup chopped orange segments
1 cup vanilla yogurt
1 cup granola
Garnish:
3 frozen cranberries sliced in halves
3-9 small basil leaves
2 tablespoons granola
Instructions:
SELECT two (1-cup) to-go containers or (8 oz) glass jars.
MINCE frozen cranberries in a mini food processor.
STIR minced cranberries, agave, and basil in a small bowl. In each jar, LAYER 1/4 cup cranberry mixture, 1/4 cup oranges, 1/4 cup granola, 1/2 cup vanilla yogurt, remaining 1/4 cup cranberry mixture, remaining 1/4 cup oranges, and remaining granola. Cover and refrigerate for 1-3 days.
TO SERVE: Garnish with sliced frozen cranberries, basil, and a granola sprinkle!
